Garlic extract is extracted from the bulb of allium sativum, commonly known as garlic. Main active ingredient of the extract is Allicin. Allicin is hardly soluble in water but it is easily soluble in organic solvent. Allicin has antibacterial, anti-inflammatory, anti-fatigue and antioxidant properties. Allicin can be used in food additives, insecticides and pharmaceuticals, and it is also a kind of pharmaceutical intermediate.
